BURDOCK
(Arctium lappa)

Burdock, also known as Great Burdock, is a member of the thistle family. It has large, heartshaped leaves with purple flowers and it can grow as large as two feet long and one foot wide.
Burdock is easy to grow from seeds. Grow it in a partly sunny location in damp soil. Harvest the roots the second year in the fall.

Burdock Root contains vitamins A, B complex, C, E, and P.

You can cook the root and eat it. Raw stems and young leaves can be added in salads.

Parts used: Leaves, roots, seeds.

Use with caution if you are pregnant since large quantities may stimulate the uterus.
